Ingredients

Scale
  • 1 cup unsalted butter (softened)
  • 1/2 cup granulated sugar
  • 1/2 cup powdered sugar
  • 2 cups all-purpose flour (or gluten-free flour for a GF option)
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

1. Prepare the Dough:
  1. In a large mixing bowl, cream together softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add vanilla extract and mix until incorporated.
  3. Gradually add flour and salt, mixing until a soft dough forms.
2. Chill the Dough:
  1. Shape the dough into a log (about 2 inches in diameter) and wrap it in plastic wrap.
  2. Refrigerate for at least 1 hour to firm up.
3. Slice & Bake:
  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Slice the chilled dough into ¼-inch thick rounds and place them on the prepared baking sheet.
  3. Bake for 12–15 minutes, or until the edges are lightly golden.
4. Cool & Serve:
  1. Allow cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
  2. Enjoy with tea, coffee, or as a delightful holiday treat!
