- 1/2 cup light corn syrup
- 1/2 cup water
- 2 large egg whites, room temperature
- 1 tsp vanilla extract

Instructions
- Prepare Baking Surface: Line a baking sheet with parchment paper or grease it lightly. Set aside.
- Make the Sugar Syrup: In a saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves, then stop stirring and let it cook until it reaches 250°F (hard-ball stage) on a candy thermometer.
- Whip the Egg Whites: While the syrup is cooking, beat egg whites and a pinch of salt in a stand mixer on high speed until stiff peaks form.
- Combine Syrup & Egg Whites: Slowly pour the hot syrup into the egg whites while mixing on high speed. Continue beating for 5–7 minutes until the mixture thickens, becomes glossy, and holds its shape.
- Add Flavor & Nuts: Mix in vanilla extract and chopped nuts, if using.
- Shape the Candy: Drop spoonfuls of the mixture onto the prepared baking sheet. Work quickly before it sets!
- Set & Serve: Let candies sit at room temperature for 1–2 hours until firm. Enjoy!
