Instructions

  1. Prepare Baking Surface: Line a baking sheet with parchment paper or grease it lightly. Set aside.
  2. Make the Sugar Syrup: In a saucepan over medium heat, combine sugar, corn syrup, and water. Stir until sugar dissolves, then stop stirring and let it cook until it reaches 250°F (hard-ball stage) on a candy thermometer.
  3. Whip the Egg Whites: While the syrup is cooking, beat egg whites and a pinch of salt in a stand mixer on high speed until stiff peaks form.
  4. Combine Syrup & Egg Whites: Slowly pour the hot syrup into the egg whites while mixing on high speed. Continue beating for 5–7 minutes until the mixture thickens, becomes glossy, and holds its shape.
  5. Add Flavor & Nuts: Mix in vanilla extract and chopped nuts, if using.
  6. Shape the Candy: Drop spoonfuls of the mixture onto the prepared baking sheet. Work quickly before it sets!
  7. Set & Serve: Let candies sit at room temperature for 1–2 hours until firm. Enjoy!
