Instructions

1. Prepare Your Workstation

  • Line a baking sheet with parchment paper or wax paper.
  • Chop pecans or walnuts if using and set aside.

2. Make the Syrup

  1. In a heavy saucepan, combine sugar, corn syrup, and water.
  2. Cook over medium heat, stirring until the sugar dissolves.
  3. Attach a candy thermometer and cook without stirring until the mixture reaches 250°F (hard ball stage).

3. Beat the Egg Whites

  • While the syrup is cooking, beat egg whites in a clean mixing bowl until stiff peaks form.

4. Combine Syrup and Egg Whites

  1. Once the syrup reaches 250°F, slowly pour it in a thin stream into the beaten egg whites while mixing at medium speed.
  2. Be cautious to avoid splattering hot syrup.

5. Add Flavoring and Nuts

  1. Increase the mixer speed to high and continue beating until the candy loses its glossy shine and holds its shape (about 4-5 minutes).
  2. Mix in vanilla extract and nuts (if using).

6. Shape the Divinity

  • Using two spoons, drop spoonfuls of the mixture onto the prepared baking sheet. Work quickly as the candy will set fast.

7. Cool and Store

  • Allow candies to cool completely at room temperature before transferring them to an airtight container.
