Pizza Gaina, also known as Easter Pie, is a traditional Italian savory pie filled with rich cheeses, cured meats, and eggs, all encased in a flaky, golden crust. Pie Dough (Crust):

  • 3 cups all-purpose flour
  • 1 tsp salt
  • 1/2 cup unsalted butter, cubed
  • 2 eggs
  • 1/4 cup cold water

Filling:

  • 6 large eggs
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup cubed provolone cheese
  • 1 cup diced salami
  • 1 cup diced ham or prosciutto
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 tbsp chopped fresh parsley (optional)

Egg Wash:

  • 1 egg, beaten (for brushing the crust)

Instructions

1. Prepare the Dough:

  • In a large bowl, mix flour and salt.
  • Cut in butter until the mixture resembles coarse crumbs.
  • Add eggs and cold water, mixing until a dough forms.
  • Knead briefly, wrap in plastic, and refrigerate for 30 minutes.

2. Make the Filling:

  • In a large bowl, whisk eggs, ricotta, mozzarella, Parmesan, provolone, and seasonings.
  • Stir in diced salami and ham until evenly combined.

3. Assemble the Pie:

  • Preheat oven to 375°F (190°C).
  • Roll out ⅔ of the dough and press it into a greased 9-inch pie dish.
  • Pour in the filling, spreading it evenly.
  • Roll out the remaining dough and place it over the filling, sealing the edges.
  • Brush with egg wash for a golden finish.

4. Bake & Serve:

  • Bake for 45-50 minutes until the crust is golden brown.
  • Let cool for at least 15 minutes before slicing.
  • Serve warm or at room temperature.
