Pie Dough (Crust):
- 3 cups all-purpose flour
- 1 tsp salt
- 1/2 cup unsalted butter, cubed
- 2 eggs
- 1/4 cup cold water
Filling:
- 6 large eggs
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup cubed provolone cheese
- 1 cup diced salami
- 1 cup diced ham or prosciutto
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 tbsp chopped fresh parsley (optional)
Egg Wash:
- 1 egg, beaten (for brushing the crust)
Instructions
1. Prepare the Dough:
- In a large bowl, mix flour and salt.
- Cut in butter until the mixture resembles coarse crumbs.
- Add eggs and cold water, mixing until a dough forms.
- Knead briefly, wrap in plastic, and refrigerate for 30 minutes.
2. Make the Filling:
- In a large bowl, whisk eggs, ricotta, mozzarella, Parmesan, provolone, and seasonings.
- Stir in diced salami and ham until evenly combined.
3. Assemble the Pie:
- Preheat oven to 375°F (190°C).
- Roll out ⅔ of the dough and press it into a greased 9-inch pie dish.
- Pour in the filling, spreading it evenly.
- Roll out the remaining dough and place it over the filling, sealing the edges.
- Brush with egg wash for a golden finish.
4. Bake & Serve:
- Bake for 45-50 minutes until the crust is golden brown.
- Let cool for at least 15 minutes before slicing.
- Serve warm or at room temperature.
