This Easiest Ever Carrot and Lentil Soup is a nourishing, hearty one-pot meal made with wholesome lentils, sweet carrots, aromatic herbs, and a hint of lemon. It’s packed with plant-based protein, full of flavor, and perfect for a cozy, quick, and healthy dinner or meal prep.


Ingredients

  • 1 cup green or brown lentils, rinsed
  • 2 large carrots, diced
  • 1 celery stalk, diced
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice

 

  • 2 tablespoons fresh parsley, chopped

Instructions

  • Heat olive oil in a large pot over medium heat. Add onion, carrots, and celery. Sauté for 5 minutes until vegetables soften.
  • Stir in garlic, cumin, smoked paprika, and thyme. Cook for 1 minute until fragrant.
  • Add lentils and vegetable broth. Bring to a boil, then reduce heat and simmer for 25–30 minutes until lentils are tender.
  • Stir in salt, black pepper, and lemon juice. Adjust seasoning as needed.

 

  • Garnish with chopped fresh parsley and serve warm.

  • Blend half the soup for a creamier texture, if desired.
