Ingredients
For the burgers:

1 lb ground beef (80/20)

Salt and black pepper, to taste

1 tablespoon butter or oil (for griddle)

2 burger buns

1 cup shredded iceberg lettuce
For the olive tapenade:

1/2 cup pitted Kalamata olives

1/4 cup green olives with pimento

2 tablespoons capers
-
1 garlic clove
-
1 tablespoon olive oil

Juice of 1/2 lemon

1/4 cup crumbled feta cheese

Instructions
1. Make the tapenade:

In a food processor, pulse together Kalamata olives, green olives, capers, garlic, olive oil, and lemon juice until finely chopped but still textured.

Stir in crumbled feta and set aside.
2. Shape and smash patties:

Divide ground beef into 4 equal portions and roll into balls.

Heat a cast-iron skillet or griddle over high heat, add butter or oil.

Place two beef balls on the hot surface, smash them flat with a spatula, and season with salt and pepper.
3. Cook the burgers:

Cook each patty for about 2 minutes per side until crispy and browned. Repeat with the remaining patties.
4. Assemble the burgers:

Lightly toast buns if desired.

Stack two patties per burger, top with shredded lettuce, and spoon on the feta olive tapenade.

Add the top bun and press lightly.
5. Serve:
