- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
- 2 green onions, sliced
- Fresh parsley, for garnish
- 1 tsp dried thyme
- Canned Goods:
- 2 cups chicken broth
- Baking & Spices:
- 1 tsp paprika
- 1/2 tsp cayenne pepper (adjust for spice level)
- Salt and pepper, to taste
- Grains:
- 1 cup white rice (long grain or jasmine)
- Oils & Vinegars:
- 2 tbsp vegetable oil
Instructions
- Cook the Rice:
- In a medium saucepan, cook the white rice according to the package instructions using chicken broth instead of water for extra flavor. Set aside.
- Sauté the Vegetables:
- Heat the vegetable oil in a large skillet over medium heat. Add the onion, bell pepper, and celery, and sauté for 5-7 minutes until softened. Add the garlic and cook for 1 minute until fragrant.
- Cook the Ground Beef:
- Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon. Drain any excess grease.
- Season the Mixture:
- Stir in the dried thyme, paprika, cayenne pepper, and salt and pepper. Cook for 1-2 minutes to toast the spices.
- Combine with Rice:
- Add the cooked rice to the skillet with the beef and vegetable mixture. Pour in 1/2 cup of chicken broth and stir well to combine. Cook over low heat for 5 minutes, allowing the flavors to meld together.
- Serve:
- Garnish with sliced green onions and fresh parsley. Serve hot as a main dish or alongside other Southern-inspired dishes.
Notes
- For extra depth of flavor, substitute the ground beef with a mix of ground pork or sausage.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet with a splash of broth to refresh the flavors.
- Adjust the spice level by adding more or less cayenne pepper.
