Instructions

  1. Cook Ground Beef:
    • Heat 1 tbsp of vegetable oil in a large skillet or pot over medium heat.
    • Add the ground beef and cook until browned, breaking it into crumbles with a spatula. Drain excess fat and set aside.
  2. Sauté Vegetables:
    • In the same skillet, add the remaining 1 tbsp of oil. Sauté the onion, bell pepper, and celery for 3–4 minutes until softened. Add garlic and thyme, cooking for an additional minute until fragrant.
  3. Toast Rice and Combine:
    • Stir in the uncooked rice, paprika, cayenne pepper, salt, and pepper. Cook for 1–2 minutes to lightly toast the rice and blend the flavors.
  4. Add Broth and Simmer:
    • Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
  5. Combine and Garnish:
    • Stir the cooked ground beef back into the skillet. Heat through for 2–3 minutes.
    • Garnish with sliced green onions and chopped parsley before serving.
