Instructions
- Cook Ground Beef:
- Heat 1 tbsp of vegetable oil in a large skillet or pot over medium heat.
- Add the ground beef and cook until browned, breaking it into crumbles with a spatula. Drain excess fat and set aside.
- Sauté Vegetables:
- In the same skillet, add the remaining 1 tbsp of oil. Sauté the onion, bell pepper, and celery for 3–4 minutes until softened. Add garlic and thyme, cooking for an additional minute until fragrant.
- Toast Rice and Combine:
- Stir in the uncooked rice, paprika, cayenne pepper, salt, and pepper. Cook for 1–2 minutes to lightly toast the rice and blend the flavors.
- Add Broth and Simmer:
- Pour in the chicken broth, stirring to combine. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18–20 minutes, or until the rice is tender and the liquid is absorbed.
- Combine and Garnish:
- Stir the cooked ground beef back into the skillet. Heat through for 2–3 minutes.
- Garnish with sliced green onions and chopped parsley before serving.
