- 1 cup cherry tomatoes, halved
- 1/2 cup cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
For the Dressing:
- 3 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp Dijon mustard
- Salt and pepper, to taste
Instructions

- In a small bowl, whisk together olive oil, lemon juice, minced garlic, Dijon mustard, salt, and pepper until emulsified.

- In a large mixing bowl, combine white beans, cherry tomatoes, cucumber, red onion, parsley, and feta cheese (if using).

- Pour the prepared dressing over the salad. Toss gently to ensure all ingredients are evenly coated.
