For the Cream Cheese Frosting:

  • 8 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Instructions

. Prepare the Carrot Cake Bars

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. In a large bowl, beat the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the grated carrots, crushed pineapple, and walnuts (if using).

2. Bake the Bars

  1. Pour the batter into the prepared pan and spread evenly.
  2. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Allow the cake to cool completely in the pan on a wire rack.

3. Prepare the Cream Cheese Frosting

  1. In a large bowl, beat the cream cheese and butter together until smooth.
  2. Gradually add the powdered sugar, beating until creamy and fluffy.
  3. Stir in the vanilla extract.
