- 2 tbsp peanut butter
- 1 tbsp honey (or maple syrup for vegan)
- 2 cloves garlic, minced
- 1 tsp dried red chili flakes
- 1/4 tsp ground black pepper
For Garnish:
- 2 tbsp chopped fresh parsley
Instructions
1. Prep the Cucumbers:
- Place the cucumber slices in a mixing bowl. Sprinkle with salt and toss to coat.
- Transfer to a colander and allow them to drain for 1 hour to remove excess moisture.
2. Make the Peanut Sauce:
- In a small bowl, whisk together soy sauce, rice vinegar, peanut butter, honey, garlic, chili flakes, and black pepper until smooth.
3. Assemble the Dish:
- After the cucumbers have drained, transfer them to a large mixing bowl.
- Add the chopped peanuts, parsley, and prepared peanut sauce. Toss gently to coat the cucumbers evenly.
4. Serve:
