Description

Crustless Spinach Feta Quiche is a light, low-carb, and protein-rich dish that’s ideal for breakfast, brunch, or meal prep. Made with fresh spinach, caramelized onions, and creamy feta cheese, this gluten-free quiche is fluffy, flavorful, and easy to bake—no crust needed!


Ingredients

  • 1 tablespoon olive oil

  • 1 small onion, finely chopped

  • 3 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

  • 5 large eggs

  • 1/2 cup heavy cream (or milk of choice)

  • 1 cup crumbled feta cheese

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

 

  • Optional: fresh herbs (dill, parsley) for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish.

  2. In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until golden and soft.

  3. Add fresh spinach and cook until wilted (or use thawed frozen spinach). Let mixture cool slightly.

  4. In a mixing bowl, whisk together eggs, cream, salt, and pepper.

  5. Stir in the spinach-onion mixture and crumbled feta cheese.

  6. Pour into the prepared pie dish and smooth the top.

  7. Bake for 35–40 minutes, until the center is set and the top is lightly golden.

  8. Cool for 10 minutes before slicing. Garnish with fresh herbs and serve warm or chilled.

Notes

  • You can use milk or a dairy-free alternative instead of cream.

  • For added flavor, mix in herbs like dill or parsley directly into the batter.
