Ingredients

1 tablespoon olive oil

1 small onion, finely chopped

3 cups fresh spinach (or 1 cup frozen, thawed & squeezed dry)

5 large eggs

1/2 cup heavy cream (or milk of choice)

1 cup crumbled feta cheese

1/4 teaspoon salt

1/4 teaspoon black pepper

Optional: fresh herbs (dill, parsley) for garnish
Instructions

Preheat oven to 375°F (190°C). Lightly grease a 9-inch pie dish.

In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until golden and soft.

Add fresh spinach and cook until wilted (or use thawed frozen spinach). Let mixture cool slightly.

In a mixing bowl, whisk together eggs, cream, salt, and pepper.

Stir in the spinach-onion mixture and crumbled feta cheese.

Pour into the prepared pie dish and smooth the top.

Bake for 35–40 minutes, until the center is set and the top is lightly golden.
