Ingredients

  • 2 lbs boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/3 cup honey
  • 1/4 cup bourbon
  • 1/4 cup ketchup
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 teaspoon ground ginger
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch + 2 tablespoons water (for thickening)
  • 2 green onions, chopped (for garnish)

Instructions

  • Place chicken thighs in the crockpot.
  • In a bowl, whisk together soy sauce, honey, bourbon, ketchup, apple cider vinegar, brown sugar, garlic, ginger, and red pepper flakes.
  • Pour the sauce over the chicken and cover.
  • Cook on LOW for 4-5 hours or HIGH for 2-3 hours until the chicken is tender.
  • Remove the chicken, shred it, and set aside.
  • In a small bowl, mix cornstarch and water, then stir into the sauce.
  • Cook on HIGH for 10-15 minutes until thickened.
  • Return the shredded chicken to the crockpot, toss in the sauce, and serve over rice.
  • Garnish with chopped green onions and enjoy!

  • For extra smoky flavor, add a splash of liquid smoke.
