- 2 lbs boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/3 cup honey
- 1/4 cup bourbon
- 1/4 cup ketchup
- 2 tablespoons apple cider vinegar
- 2 tablespoons brown sugar
- 3 cloves garlic, minced
- 1 teaspoon ground ginger
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon cornstarch + 2 tablespoons water (for thickening)
- 2 green onions, chopped (for garnish)
Instructions
- Place chicken thighs in the crockpot.
- In a bowl, whisk together soy sauce, honey, bourbon, ketchup, apple cider vinegar, brown sugar, garlic, ginger, and red pepper flakes.
- Pour the sauce over the chicken and cover.
- Cook on LOW for 4-5 hours or HIGH for 2-3 hours until the chicken is tender.
- Remove the chicken, shred it, and set aside.
- In a small bowl, mix cornstarch and water, then stir into the sauce.
- Cook on HIGH for 10-15 minutes until thickened.
- Return the shredded chicken to the crockpot, toss in the sauce, and serve over rice.
- Garnish with chopped green onions and enjoy!
