Instructions

Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.

In a large bowl, mix olive oil, smoked paprika, garlic powder, onion powder, cumin, salt, pepper, and cayenne (if using).

Add cauliflower florets and toss until well coated.

Spread florets in a single layer on the baking sheet, leaving space between each piece.

Roast for 25–30 minutes, flipping halfway through, until crispy and golden brown.

Remove from oven, garnish with chopped herbs, and serve hot with your favorite vegan dipping sauce.
Notes

For an air fryer version, cook at 400°F (200°C) for 15–18 minutes, shaking halfway.
