Ingredients

  • 1 lb potato gnocchi (fresh or store-bought)
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon unsalted butter

Instructions

  • Crisp the Gnocchi: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add gnocchi and cook until golden and crispy (about 5 minutes). Remove and set aside.
  • Sauté the Garlic & Tomatoes: In the same skillet, add the remaining olive oil and sauté garlic for 30 seconds.
  • Add Seasonings & Spinach: Stir in sun-dried tomatoes, salt, black pepper, and red pepper flakes. Cook for 2 minutes, then add spinach and cook until wilted.
  • Combine & Finish: Return crispy gnocchi to the pan, add butter, and toss everything together.
  • Serve: Sprinkle with Parmesan cheese and serve immediately.
