- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1/4 cup grated Parmesan cheese
- 1 tablespoon unsalted butter
Instructions
- Crisp the Gnocchi: Heat 1 tablespoon olive oil in a large skillet over medium heat. Add gnocchi and cook until golden and crispy (about 5 minutes). Remove and set aside.
- Sauté the Garlic & Tomatoes: In the same skillet, add the remaining olive oil and sauté garlic for 30 seconds.
- Add Seasonings & Spinach: Stir in sun-dried tomatoes, salt, black pepper, and red pepper flakes. Cook for 2 minutes, then add spinach and cook until wilted.
- Combine & Finish: Return crispy gnocchi to the pan, add butter, and toss everything together.
- Serve: Sprinkle with Parmesan cheese and serve immediately.
