Description

Ingredients

  • 2 cups fresh or frozen corn kernels (thawed if frozen)

  • 2 large eggs

  • 1/4 cup green onions, finely chopped

  • 1/2 cup shredded cheddar cheese (optional)

  • 1/3 cup almond flour or oat flour

  • 1/4 cup cornmeal

  • 1/4 tsp garlic powder

  • 1/4 tsp smoked paprika

  • Salt & pepper, to taste

  • 1 tsp baking powder (gluten-free certified)

  • 2 tbsp milk (or dairy-free alternative)

  • 2-3 tbsp olive oil or avocado oil (for frying)


Instructions

  1. Mix Wet Ingredients: In a large bowl, combine corn, eggs, green onions, cheese (if using), and milk.

  2. Combine Dry Ingredients: In another bowl, whisk almond or oat flour, cornmeal, baking powder, garlic powder, paprika, salt, and pepper.

  3. Make Batter: Add dry mixture to the wet and stir until fully incorporated. Batter will be thick.

  4. Fry Fritters: Heat oil in a skillet over medium heat. Scoop ¼ cup portions of batter into pan, flattening gently.

  5. Cook Until Crisp: Fry 2–3 minutes per side or until golden and crispy. Transfer to a paper towel-lined plate.

  6. Serve Warm: Enjoy with butter, sour cream, or alongside crispy bacon.

Notes

For dairy-free, skip cheese and use plant milk. Almond flour gives nuttiness; oat flour makes them softer. Best served fresh but can be reheated in the oven.
