Description

  • 4 skinless, boneless chicken breasts, halved and pounded thin
  • 2 large eggs
  • 1 tsp salt
  • 1 tsp lemon juice
  • 1 tsp black pepper powder
  • 2 tsp garlic powder
  • 1/2 tsp paprika powder
  • 1/2 cup all-purpose flour
  • 2 cups panko breadcrumbs
  • 1 tsp Italian seasoning
  • Vegetable oil (for frying)
For Serving:

 

  • Lemon wedges
  • Fresh cucumber, tomato, and red pepper slices
  • Garlic bread

Instructions

Prepare the Chicken:
  1. Place chicken breasts between plastic wrap and pound thin with a mallet.
  2. Season with salt, black pepper, garlic powder, paprika, and lemon juice.
  3. Let marinate for 15 minutes.
Set Up the Breading Station:
  1. In one bowl, whisk the eggs.
  2. In another, place the flour.
  3. In a third, mix panko breadcrumbs with Italian seasoning.
Bread the Chicken:
  1. Dredge each chicken piece in flour, then dip into beaten eggs, and finally coat with seasoned breadcrumbs, pressing gently to adhere.
Fry the Schnitzel:
  1. Heat 1/2 inch of vegetable oil in a pan over medium heat.
  2. Fry chicken 2-3 minutes per side until golden brown and crispy.
  3. Transfer to a paper towel-lined plate to drain excess oil.
Serve:

 

  1. Plate the crispy schnitzel with fresh salad, lemon wedges, and garlic bread. Serve hot and enjoy!
