The crispy breadcrumb-coated chicken is stuffed with garlic-infused butter, while the creamy white bean side dish adds a luxurious touch. Perfect for a restaurant-quality dinner at home, this dish is both indulgent and high in protein!

Ingredients

Scale

For the Chicken Kiev:

  • 2 chicken breasts
  • 1/2 cup butter, softened
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1 egg, beaten
  • 1/2 cup flour

For the Creamy White Beans:

  • 1 can white beans, drained
  • 1/2 cup heavy cream
  • 1/2 tsp garlic powder
  • Fresh parsley for garnish

Instructions

Prepare the Chicken Kiev:

  1. Make the garlic butter: Mix softened butter with minced garlic and freeze in small portions until firm.
  2. Flatten & stuff the chicken: Pound chicken breasts flat, place a portion of frozen garlic butter inside, and roll tightly.
  3. Coat the chicken: Dredge each rolled chicken breast in flour, dip in beaten egg, and coat with breadcrumbs.
  4. Fry & bake: Fry in hot oil until golden brown, then transfer to a baking dish and bake at 375°F (190°C) for 15 minutes.

Prepare the Creamy White Beans:

  1. Simmer the beans: In a saucepan, heat white beans, heavy cream, and garlic powder, stirring until creamy and heated through.

Serve & Garnish:

  1. Slice the chicken and serve over the creamy white beans. Garnish with fresh parsley and enjoy!

Notes

  • Use panko breadcrumbs for an extra crispy coating.
  • Add a pinch of lemon zest to the garlic butter for a fresh citrusy kick.
  • Pair with a side of roasted vegetables or buttery mashed potatoes for a complete meal.
  • For a lighter version, bake the chicken at 400°F (200°C) for 25 minutes, skipping the frying step.
