Description

This Crisp Fennel and Feta Roll is a flaky, golden pastry filled with a delicious combination of caramelized fennel, creamy feta cheese, and aromatic herbs. For the Filling:

  • 1 medium fennel bulb, thinly sliced
  • 1 small onion, finely chopped
  • 2 tbsp olive oil
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp fennel seeds (optional, for extra flavor)
  • 1/2 tsp dried oregano or thyme
  • 1/2 cup feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

For the Pastry:

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • 1 tbsp sesame seeds or nigella seeds (optional, for topping)

Instructions

1. Prepare the Fennel Filling:

  1. Heat olive oil in a pan over medium heat.
  2. Add sliced fennel and onion, cooking until soft and slightly caramelized (about 10 minutes).
  3. Stir in garlic, salt, pepper, fennel seeds, and oregano. Cook for another 2 minutes.
  4. Remove from heat, let cool slightly, then mix in feta cheese and fresh parsley.

2. Assemble the Roll:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface.
  3. Spread the fennel and feta filling evenly along one side of the pastry, leaving a 1-inch border.
  4. Gently roll the pastry over the filling, sealing the edges with a bit of water.
  5. Brush the top with egg wash and sprinkle with sesame or nigella seeds.

3. Bake the Roll:

  1. Transfer to the baking sheet and bake for 25-30 minutes, or until golden brown and crispy.
  2. Let cool for 5 minutes, then slice and serve warm.
