- 1/2 tsp dried oregano or thyme
- 1/2 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
For the Pastry:
- 1 sheet puff pastry, thawed
- 1 egg (for egg wash)
- 1 tbsp sesame seeds or nigella seeds (optional, for topping)
Instructions
1. Prepare the Fennel Filling:
- Heat olive oil in a pan over medium heat.
- Add sliced fennel and onion, cooking until soft and slightly caramelized (about 10 minutes).
- Stir in garlic, salt, pepper, fennel seeds, and oregano. Cook for another 2 minutes.
- Remove from heat, let cool slightly, then mix in feta cheese and fresh parsley.
2. Assemble the Roll:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface.
- Spread the fennel and feta filling evenly along one side of the pastry, leaving a 1-inch border.
- Gently roll the pastry over the filling, sealing the edges with a bit of water.
- Brush the top with egg wash and sprinkle with sesame or nigella seeds.
3. Bake the Roll:
- Transfer to the baking sheet and bake for 25-30 minutes, or until golden brown and crispy.
- Let cool for 5 minutes, then slice and serve warm.
