Ingredients

Units Scale
  • Produce:

    • 2 tbsp fresh basil (chopped)
    • 2 cloves garlic (minced)
    • 1 can (14 oz) tomatoes (crushed or diced)
  • Baking & Spices:

    • 1/2 tsp red pepper flakes
    • Salt and black pepper (to taste)
  • Oils & Vinegars:

    • 1 tbsp olive oil
  • Dairy:

    • 1/2 cup heavy cream
    • 1/4 cup parmesan cheese (grated)
  • Beer, Wine & Liquor:

    • 1/4 cup vodka

Instructions

1. Prepare the Sauce:

  • Heat olive oil in a large skillet over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.

2. Add Tomatoes and Vodka:

  • Stir in the canned tomatoes and vodka, cooking for 2–3 minutes to allow the alcohol to evaporate.

3. Season:

  • Add red pepper flakes, salt, and black pepper to taste. Let the sauce simmer for 10 minutes, stirring occasionally.

4. Add Cream and Cheese:

  • Lower the heat and stir in the heavy cream, allowing the sauce to become rich and creamy.
  • Mix in the grated parmesan cheese until melted and combined.

5. Combine with Pasta:

  • Cook your favorite pasta according to the package instructions. Reserve ½ cup of pasta water.
  • Toss the cooked pasta with the sauce, adding a bit of pasta water if needed for a silky consistency.

6. Garnish and Serve:

  • Sprinkle fresh basil on top and serve with additional parmesan if desired.

Notes

  • Pasta Choice: Penne is traditional, but any short pasta like rigatoni works well.
  • Tomatoes: For extra flavor, use San Marzano tomatoes if available.
  • Vodka Substitute: You can use chicken broth for a non-alcoholic version.
