Description

Ingredients

  • 1 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 (9 oz) package refrigerated cheese tortellini

  • 2 cups baby spinach, roughly chopped

  • 1 1/2 cups heavy cream

  • 1/2 cup grated parmesan cheese

  • 1/4 tsp crushed red pepper flakes (optional)

  • Salt and pepper, to taste

  • 1/4 cup chopped sun-dried tomatoes or diced fresh tomato (optional)

 

  • 1/2 tsp Italian seasoning


Instructions

  1. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for about 1 minute until fragrant.

  2. Pour in heavy cream and bring to a gentle simmer. Stir in parmesan cheese, Italian seasoning, salt, pepper, and red pepper flakes if using.

  3. Add cheese tortellini and cook for 5–7 minutes, or until heated through and tender. Stir in sun-dried or fresh tomatoes if using.

  4. Add spinach and let it wilt, stirring gently to combine.

  5. Simmer for 2–3 more minutes, until sauce thickens slightly.

  6. Serve hot, garnished with extra parmesan or freshly cracked black pepper.

  • For extra protein, add cooked chicken or Italian sausage.

  • Swap heavy cream for half-and-half to lighten it up.
