  • 2 cups water
  • 1 (12 oz) can evaporated milk
  • 1 cup whole milk (or more for extra creaminess)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus extra for garnish)
  • 1/4 teaspoon salt
  • 1 cinnamon stick (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Cook the rice: In a medium saucepan, bring 2 cups of water to a boil. Add rice and salt, then reduce heat, cover, and simmer for 15 minutes until rice is tender.
  2. Add evaporated milk: Stir in evaporated milk, whole milk, sugar, cinnamon stick, and ground cinnamon.
  3. Simmer & thicken: Cook over low heat, stirring frequently, for 15-20 minutes until thick and creamy. Add raisins if using.
  4. Finish with vanilla: Remove from heat and stir in vanilla extract.
  5. Serve warm or chilled: Garnish with extra cinnamon and enjoy!

Notes

  • For extra creaminess, add ½ cup more whole milk while simmering.
