Scale
- 1 cup white rice (short or medium grain)
- 2 cups water
- 1 (12 oz) can evaporated milk
- 1 cup whole milk (or more for extra creaminess)
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (plus extra for garnish)
- 1/4 teaspoon salt
- 1 cinnamon stick (optional)
- 1/4 cup raisins (optional)
Instructions
- Cook the rice: In a medium saucepan, bring 2 cups of water to a boil. Add rice and salt, then reduce heat, cover, and simmer for 15 minutes until rice is tender.
- Add evaporated milk: Stir in evaporated milk, whole milk, sugar, cinnamon stick, and ground cinnamon.
- Simmer & thicken: Cook over low heat, stirring frequently, for 15-20 minutes until thick and creamy. Add raisins if using.
- Finish with vanilla: Remove from heat and stir in vanilla extract.
- Serve warm or chilled: Garnish with extra cinnamon and enjoy!
Notes
- For extra creaminess, add ½ cup more whole milk while simmering.
- Prefer a thicker pudding? Let it sit for 10 minutes after cooking—it will continue to thicken.
- For a richer flavor, swap whole milk with half-and-half or heavy cream.
- No raisins? Try chopped nuts or a drizzle of honey instead!
- Storage: Keep in an airtight container in the fridge for up to 3 days.
