- 200g savoiardi (ladyfinger) biscuits
- 100ml strong coffee (espresso preferred)
- 100g pistachio paste
- 75g icing sugar
- 300ml double cream
- 250g mascarpone cheese
- Chopped pistachios, for garnish
Instructions
1️⃣ Prepare the Pistachio Cream
- In a bowl, whisk together the mascarpone, pistachio paste, and icing sugar until smooth.
- In a separate bowl, whip the double cream until soft peaks form.
- Gently fold the whipped cream into the pistachio mascarpone mixture until well combined.
2️⃣ Assemble the Tiramisu
- Quickly dip each savoiardi biscuit into the strong coffee, ensuring they absorb the flavor but don’t become soggy.
- Arrange a layer of the coffee-soaked biscuits in a serving dish.
- Spread half of the pistachio cream evenly over the biscuits.
- Repeat with another layer of coffee-soaked biscuits and top with the remaining pistachio cream.
3️⃣ Chill & Serve
- Cover and refrigerate for at least 4 hours (overnight is best for full flavor).
- Before serving, sprinkle with chopped pistachios for extra crunch.
