Description

This Creamy Pesto Pasta Sauce is an elevated, indulgent twist on classic pesto, blending fresh basil, toasted pine nuts, Parmesan, and burrata with a rich, velvety texture. Tossed with al dente pasta, it’s an easy yet luxurious meal perfect for any occasion!


Ingredients

For the Pesto Sauce

  • 100g fresh basil
  • 100g toasted pine nuts
  • 1 garlic clove
  • 70g Parmesan, grated
  • 1 lemon, zest and juice
  • 1/2 tbsp freshly ground black pepper
  • Salt, to taste
  • 200ml olive oil
  • 3 tbsp double cream

For the Pasta

  • 200g dried casarecce (or pasta of choice)

For Garnish

  • 1 burrata, torn
  • Extra toasted pine nuts

Instructions

1️⃣ Cook the Pasta

  1. Bring a pot of salted water to a boil and cook casarecce according to package instructions until al dente.
  2. Reserve ½ cup of pasta water, then drain and set aside.

2️⃣ Make the Pesto Sauce

  1. In a food processor, blend basil, toasted pine nuts, garlic, Parmesan, black pepper, and salt until finely chopped.
  2. Slowly drizzle in olive oil while blending until smooth.
  3. Stir in double cream, lemon juice, and zest for a rich, creamy texture.

3️⃣ Combine & Serve

  1. Toss the hot pasta with the creamy pesto sauce, adding reserved pasta water a little at a time to coat evenly.
  2. Plate the pasta and top with torn burrata and extra toasted pine nuts.
  3. Drizzle with extra olive oil and serve immediately!

Notes

  • For extra creaminess, add more burrata when serving.
  • Swap pine nuts for walnuts for a different flavor twist.
  • Works great with spaghetti, rigatoni, or fusilli.
