For the Soup:

  • 1 lb Italian sausage
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 4 cups chicken broth
  • 1 (14.5 oz) can petite diced tomatoes
  • 8 oz ditalini pasta
  • 8 oz cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh basil, chopped (for garnish)

Instructions

1. Cook the Sausage & Aromatics:

  1. In a large Dutch oven or soup pot, brown the Italian sausage over medium heat, crumbling it as it cooks.
  2. Drain excess grease, then stir in the onion, Italian seasoning, salt, and pepper. Cook for 1–2 minutes until fragrant.
  3. Add the minced garlic and stir for 1 more minute.

2. Add Broth, Tomatoes & Pasta:

  1. Pour in the petite diced tomatoes and chicken broth.
  2. Stir in the ditalini pasta, ensuring it’s fully submerged in the broth.
  3. Bring to a boil, then reduce heat and cook for 8 minutes, or until pasta is al dente.

3. Make it Creamy:

  1. Lower the heat to medium, then stir in the cream cheese and Parmesan cheese.
  2. Cook for another 5 minutes, stirring occasionally, until the cream cheese is fully melted and the soup is smooth.

4. Serve & Garnish:

  1. Ladle the soup into bowls and top with fresh basil.
  2. Serve warm with crusty bread or garlic toast for dipping!

Notes

  • For a spicy kick, use hot Italian sausage or add red pepper flakes.
  • Make it low-carb by substituting cauliflower rice for pasta.
