Ingredients
Scale
For the Soup:
- 1 lb Italian sausage
- 1/2 cup diced onion
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 4 cups chicken broth
- 1 (14.5 oz) can petite diced tomatoes
- 8 oz ditalini pasta
- 8 oz cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh basil, chopped (for garnish)
Instructions
1. Cook the Sausage & Aromatics:
- In a large Dutch oven or soup pot, brown the Italian sausage over medium heat, crumbling it as it cooks.
- Drain excess grease, then stir in the onion, Italian seasoning, salt, and pepper. Cook for 1–2 minutes until fragrant.
- Add the minced garlic and stir for 1 more minute.
2. Add Broth, Tomatoes & Pasta:
- Pour in the petite diced tomatoes and chicken broth.
- Stir in the ditalini pasta, ensuring it’s fully submerged in the broth.
- Bring to a boil, then reduce heat and cook for 8 minutes, or until pasta is al dente.
3. Make it Creamy:
- Lower the heat to medium, then stir in the cream cheese and Parmesan cheese.
- Cook for another 5 minutes, stirring occasionally, until the cream cheese is fully melted and the soup is smooth.
4. Serve & Garnish:
- Ladle the soup into bowls and top with fresh basil.
- Serve warm with crusty bread or garlic toast for dipping!
Notes
- For a spicy kick, use hot Italian sausage or add red pepper flakes.
- Make it low-carb by substituting cauliflower rice for pasta.
- Storage: Keep leftovers in an airtight container in the fridge for up to 3 days. Reheat gently over low heat to prevent curdling.
- Freeze without pasta for a great meal prep option—just add cooked pasta when reheating!
