- 1 small onion, finely chopped
- 2 cups mushrooms, sliced
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 1/2 cups vegetable broth
- 1/2 cup plant-based milk (or regular milk)
- 1 tsp soy sauce
- 1/2 tsp dried thyme
- Salt & pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pan over medium heat. Add onions and cook until soft, about 3-4 minutes.
- Add mushrooms and garlic and sauté until the mushrooms release moisture and become golden brown (5-7 minutes).
- Stir in flour and cook for 1-2 minutes, stirring constantly.
- Slowly add vegetable broth and plant-based milk, whisking continuously to prevent lumps.
- Stir in soy sauce, thyme, salt, and pepper. Simmer for 5-7 minutes until thickened.
- Serve warm, garnished with fresh parsley.

- For a deeper flavor, use mushroom or miso broth instead of vegetable broth.
- Swap all-purpose flour for gluten-free flour to make it gluten-free.
