Description

This Creamy Mushroom Gravy is a rich and flavorful Easter side dish, perfect for serving over mashed potatoes, roasted vegetables, or alongside ham. Made with savory mushrooms, garlic, and thyme, this easy-to-make gravy is smooth, comforting, and can be made vegan or dairy-based to suit any Easter feast.


Ingredients

  • 2 tbsp olive oil or butter
  • 1 small onion, finely chopped
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups vegetable broth
  • 1/2 cup plant-based milk (or regular milk)
  • 1 tsp soy sauce
  • 1/2 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pan over medium heat. Add onions and cook until soft, about 3-4 minutes.
  2. Add mushrooms and garlic and sauté until the mushrooms release moisture and become golden brown (5-7 minutes).
  3. Stir in flour and cook for 1-2 minutes, stirring constantly.
  4. Slowly add vegetable broth and plant-based milk, whisking continuously to prevent lumps.
  5. Stir in soy sauce, thyme, salt, and pepper. Simmer for 5-7 minutes until thickened.
  6. Serve warm, garnished with fresh parsley.

Notes

  • For a deeper flavor, use mushroom or miso broth instead of vegetable broth.
  • Swap all-purpose flour for gluten-free flour to make it gluten-free.
  • Blend the gravy for a smooth, creamy texture, or leave it chunky for more bite.
