Ingredients

Units Scale

For the Soup:

  • 1 lb ground beef (or Italian sausage)
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 8 lasagna noodles, broken into pieces

For the Creamy Finish:

  • 1/2 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

For Garnish:

  • 1/2 cup ricotta cheese
  • Fresh basil or parsley, chopped

Instructions

  1. Cook the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat if needed.
  2. Sauté Aromatics: Add the diced onion and minced garlic, cooking until soft and fragrant (about 2 minutes).
  3. Build the Broth: Pour in the crushed tomatoes, diced tomatoes, beef broth, Italian seasoning, salt, black pepper, and red pepper flakes. Stir well and bring to a simmer.
  4. Cook the Noodles: Add the broken lasagna noodles directly into the soup. Let simmer for 10-12 minutes, stirring occasionally, until the noodles are tender.
  5. Make It Creamy: Reduce the heat and stir in the heavy cream, mozzarella, and Parmesan cheese until melted and smooth.
  6. Serve & Garnish: Ladle the soup into bowls, top with a spoonful of ricotta cheese, and sprinkle with fresh basil or parsley. Enjoy your Lasagna With Ricotta in a whole new way!

Notes

  • Swap ground beef for Italian sausage for extra flavor.
  • Use gluten-free lasagna noodles if needed.
  • Make it spicier by adding extra red pepper flakes.
  • For a thicker texture, reduce the broth slightly.
