Description

This Creamy Cucumber Tomato Salad is a flavorful and refreshing low-carb side dish, packed with crispy bacon and creamy Ranch dressing. Quick and easy to make, this American-style salad is perfect for summer gatherings, BBQs, or as a simple weeknight side. With just a handful of ingredients, this dish delivers crunch, creaminess, and smoky bacon goodness in every bite!

Ingredients

Scale
  • 5 slices thick-cut bacon, cooked and diced
  • 12 teaspoons bacon drippings (optional, for extra flavor)
  • 1 cup Ranch dressing (low-fat is okay)
  • 1 pint cherry tomatoes, sliced in half
  • 2 large English cucumbers, diced

Instructions

  1. Prepare the Ingredients:
    • Cook the bacon until crispy, then dice it into small pieces.
    • Reserve 1-2 teaspoons of bacon drippings if you want extra flavor.
    • Slice the cherry tomatoes in half and dice the cucumbers.
  2. Mix the Dressing:
    • In a small bowl, mix the Ranch dressing with the bacon drippings (if using).
    • Stir in the crumbled bacon.
  3. Assemble the Salad:
    • In a large bowl, combine the tomatoes and cucumbers.
    • Pour the Ranch-bacon mixture over the veggies and toss gently until everything is well coated.
  4. Chill & Serve:
    • Taste and add salt & pepper if needed.
    • Cover with plastic wrap and refrigerate for at least 1 hour before serving for the best flavor.

Notes

  • Bacon drippings add extra smoky flavor but can be omitted for a lighter version.
  • Low-fat Ranch dressing works well if you prefer a healthier option.
  • Letting the salad chill enhances the flavors, so don’t skip this step!
