For the Casserole:
- 2 cups cooked white rice (or brown rice)
- 2 cups cooked shredded chicken (rotisserie works great)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 1/2 cups shredded cheddar cheese
- 1/2 cup mozzarella cheese (optional, for extra cheesiness)
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt (adjust to taste)
- 1/4 tsp black pepper
For the Topping:
- 1 cup crushed Ritz crackers (or breadcrumbs)
- 2 tbsp melted butter
- 2 tbsp grated Parmesan cheese (optional)
Instructions
- Preheat Oven & Prepare Dish:
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish.
- Mix the Casserole:
- In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, 1 cup of cheddar cheese, milk, garlic powder, onion powder, salt, black pepper, and paprika.
- Stir until well mixed.
- Assemble & Top:
- Spread the mixture evenly into the prepared baking dish.
- Sprinkle the remaining ½ cup of shredded cheese over the top.
- Make the Buttery Topping:
- In a small bowl, mix crushed Ritz crackers with melted butter.
- Sprinkle evenly over the casserole.
- Bake:
- Bake uncovered for 25-30 minutes, or until bubbly and golden brown on top.
- Serve & Enjoy:
- Let cool for 5 minutes before serving.
- Garnish with fresh parsley for extra flavor!
