For the Casserole:

  • 2 cups cooked white rice (or brown rice)
  • 2 cups cooked shredded chicken (rotisserie works great)
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup milk
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup mozzarella cheese (optional, for extra cheesiness)
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper

For the Topping:

  • 1 cup crushed Ritz crackers (or breadcrumbs)
  • 2 tbsp melted butter
  • 2 tbsp grated Parmesan cheese (optional)

Instructions

  • Preheat Oven & Prepare Dish:
    • Preheat oven to 375°F (190°C).
    • Lightly grease a 9×13-inch baking dish.
  • Mix the Casserole:
    • In a large bowl, combine cooked rice, shredded chicken, cream of chicken soup, cream of mushroom soup, sour cream, 1 cup of cheddar cheese, milk, garlic powder, onion powder, salt, black pepper, and paprika.
    • Stir until well mixed.
  • Assemble & Top:
    • Spread the mixture evenly into the prepared baking dish.
    • Sprinkle the remaining ½ cup of shredded cheese over the top.
  • Make the Buttery Topping:
    • In a small bowl, mix crushed Ritz crackers with melted butter.
    • Sprinkle evenly over the casserole.
  • Bake:
    • Bake uncovered for 25-30 minutes, or until bubbly and golden brown on top.
  • Serve & Enjoy:
    • Let cool for 5 minutes before serving.
    • Garnish with fresh parsley for extra flavor!
