Description

A rich and creamy spinach side dish made with fresh or frozen spinach, infused with garlic, and finished with a velvety Parmesan cream sauce. This easy and flavorful recipe pairs perfectly with steak, roasted meats, or as a holiday favorite.

Ingredients

Units Scale
  • 2 tablespoons unsalted butter
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 16 oz fresh spinach (or 10 oz frozen spinach, thawed and drained)
  • 1/2 cup grated Parmesan cheese

Instructions

  • In a large skillet, melt butter over medium heat. Add onions and cook until soft.
  • Stir in garlic and flour, cooking for 1 minute to remove the raw flour taste.
  • Slowly whisk in milk and heavy cream, stirring until thickened.
  • Season with nutmeg, salt, and pepper.
  • Add spinach and cook for 3-4 minutes, until wilted and well combined.
  • Stir in Parmesan cheese until melted and creamy.
  • Remove from heat and serve warm.

Notes

  • Use fresh spinach for a vibrant flavor, or frozen spinach for convenience.
  • Adjust thickness by adding more milk if needed.
  • For extra richness, stir in a tablespoon of cream cheese.
