Description

  • 2/3 cup milk
  • 32 Ritz crackers, crushed
  • 1/2 cup chopped onion
  • 4 ounces shredded sharp cheddar cheese
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 lbs ground beef
  • 1/2 cup ketchup
  • 1/2 cup brown sugar
  • 1 teaspoon mustard

Instructions

  • Preheat oven to 350°F (175°C).
  • In a large mixing bowl, beat the eggs. Stir in milk and crushed Ritz crackers. Add the chopped onion, shredded cheese, salt, and pepper.
  • Mix in the ground beef until fully combined. Shape the mixture into a loaf.
  • Place the meatloaf on a baking sheet or in a loaf pan and bake for 45 minutes.
  • Prepare the glaze by combining ketchup, brown sugar, and mustard in a small bowl.
  • At the 30-minute mark, remove the meatloaf and spread half of the glaze on top. Return to the oven for another 10 minutes.
  • Spread the remaining glaze over the meatloaf and bake for an additional 5-10 minutes, or until fully cooked (internal temperature of 160°F).

Notes

  • Substitute Ritz crackers with panko breadcrumbs or saltines if desired.
  • Sharp cheddar can be swapped for mild or any preferred cheese.
  • Let the meatloaf rest for 5-10 minutes before slicing to retain moisture.
