- 2 eggs
- 2/3 cup milk
- 32 Ritz crackers, crushed
- 1/2 cup chopped onion
- 4 ounces shredded sharp cheddar cheese
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1 1/2 lbs ground beef
- 1/2 cup ketchup
- 1/2 cup brown sugar
- 1 teaspoon mustard
Instructions
- Preheat oven to 350°F (175°C).
- In a large mixing bowl, beat the eggs. Stir in milk and crushed Ritz crackers. Add the chopped onion, shredded cheese, salt, and pepper.
- Mix in the ground beef until fully combined. Shape the mixture into a loaf.
- Place the meatloaf on a baking sheet or in a loaf pan and bake for 45 minutes.
- Prepare the glaze by combining ketchup, brown sugar, and mustard in a small bowl.
- At the 30-minute mark, remove the meatloaf and spread half of the glaze on top. Return to the oven for another 10 minutes.
- Spread the remaining glaze over the meatloaf and bake for an additional 5-10 minutes, or until fully cooked (internal temperature of 160°F).
Notes
- Substitute Ritz crackers with panko breadcrumbs or saltines if desired.
- Sharp cheddar can be swapped for mild or any preferred cheese.
- Let the meatloaf rest for 5-10 minutes before slicing to retain moisture.
