Description

This hearty and comforting Cowboy Casserole is a family-favorite dinner featuring creamy ground beef, crispy bacon, sweet corn, and golden tater tots all baked together with melty cheddar cheese. It’s a deliciously easy one-pan meal ready in under an hour!


Ingredients

  • 1/2 lb ground beef (85/15)

  • 1 cup corn (frozen or canned, drained)

  • 2/3 cup condensed cream of mushroom soup

  • 1 cup cheddar cheese, shredded (divided)

  • 1/3 cup whole milk

  • 1/4 cup sour cream

  • 1 tsp onion powder

  • 1/2 tsp black pepper

  • 1/2 cup cooked and crumbled bacon

 

  • 32 oz tater tots


Instructions

  • Preheat oven to 375°F.

  • In a large skillet, brown ground beef over medium heat. Drain excess fat if necessary.

  • Stir in corn, cream of mushroom soup, ½ cup cheese, milk, sour cream, onion powder, black pepper, and bacon. Mix until combined.

  • In a 9×13 baking dish, layer the beef mixture evenly.

  • Sprinkle a little cheese, then neatly arrange the tater tots on top.

  • Bake uncovered for 40–45 minutes.

  • Sprinkle with remaining cheese and bake an additional 5 minutes until cheese is melted.

 

  • Let cool slightly before serving.

Notes

  • For extra flavor, use seasoned tater tots or top with chopped green onions after baking.

  • Can be prepped ahead and refrigerated before baking.

  • Swap beef for ground turkey or plant-based crumbles for variation.
