Description

This Cowboy Butter is a rich, flavorful steak sauce made with butter, fresh herbs, garlic, Dijon mustard, and spices. It’s the ultimate buttery topping for steak, adding a bold, slightly smoky, and tangy kick. Perfect for grilled or pan-seared steaks, this easy sauce is a must-try!

For the Cowboy Butter:

  • 8 tbsp (120g) unsalted butter (softened)
  • 2 tbsp fresh parsley (finely diced)
  • 1 tbsp fresh chives (finely diced)
  • 1/2 tsp fresh thyme leaves (finely diced)
  • 1 clove garlic (finely grated/minced)
  • 2 tsp lemon juice
  • 1 tsp Dijon mustard
  • 3/4 tsp smoked paprika
  • 1/2 tsp Worcestershire sauce
  • 1/2 tsp chili flakes (adjust to spice preference)
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp black pepper (or to taste)

For the Steaks:

  • 2x 8oz (220g) sirloin steaks (room temperature)
  • 1 tbsp vegetable oil
  • Salt & black pepper (to taste)

Instructions

Step 1: Make the Cowboy Butter

  1. In a small bowl, mix together butter, parsley, chives, thyme, garlic, lemon juice, Dijon mustard, paprika, Worcestershire sauce, chili flakes, salt, and pepper.
  2. Stir until fully combined and smooth. Set aside.

Step 2: Cook the Steaks

  1. Pat steaks dry with paper towels, then season both sides with salt and pepper.
  2. Heat a large cast-iron or heavy-based pan over high heat.
  3. Once the pan is very hot, add 1 tbsp vegetable oil and let it heat for 5-10 seconds.
  4. Place the steaks in the pan and cook undisturbed for 2 minutes on one side. Flip and cook for another 2 minutes for medium-rare.
  5. Remove the steaks from the pan and let them rest for 5 minutes.

Step 3: Serve & Enjoy

  1. Spoon cowboy butter over the steaks while warm.
  2. Serve with your favorite sides and enjoy!

Notes

  • Butter Consistency: The butter should be soft and creamy but not fully melted. If needed, microwave in 5-second bursts until smooth.
