Description

These Fluffy Cottage Cheese Egg Bites are protein-packed, low-carb, and ideal for breakfast on the go, meal prep, or a satisfying snack. Loaded with creamy cottage cheese, vibrant bell peppers, spinach, and cheese, these oven-baked egg bites are easy, healthy, and gluten-free.


Ingredients

  • 6 large eggs

  • 1 cup cottage cheese

  • 1/2 cup shredded mozzarella or cheddar cheese

  • 1/2 cup red bell pepper, finely diced

  • 1/2 cup fresh spinach, chopped

  • 1/4 teaspoon garlic powder

  • Salt and black pepper, to taste

 

  • Olive oil or cooking spray (for greasing muffin tin)


Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a muffin tin with olive oil or nonstick spray.

  2. In a large bowl, whisk the eggs until smooth.

  3. Add cottage cheese, shredded cheese, garlic powder, salt, and pepper. Stir to combine.

  4. Fold in diced bell pepper and chopped spinach.

  5. Pour mixture evenly into muffin cups, filling each about 3/4 full.

  6. Bake for 20–25 minutes, or until puffed and lightly golden on top.

  7. Let cool slightly, then remove from muffin tin. Serve warm or refrigerate for up to 5 days.

Notes

  • These bites freeze well for longer storage—just reheat in the microwave.
