Ingredients

1 cup cottage cheese

1/2 cup shredded mozzarella or cheddar cheese

1/2 cup red bell pepper, finely diced

1/2 cup fresh spinach, chopped

1/4 teaspoon garlic powder

Salt and black pepper, to taste

Olive oil or cooking spray (for greasing muffin tin)
Instructions

Preheat oven to 350°F (175°C). Lightly grease a muffin tin with olive oil or nonstick spray.

In a large bowl, whisk the eggs until smooth.

Add cottage cheese, shredded cheese, garlic powder, salt, and pepper. Stir to combine.

Fold in diced bell pepper and chopped spinach.

Pour mixture evenly into muffin cups, filling each about 3/4 full.

Bake for 20–25 minutes, or until puffed and lightly golden on top.
