Instructions

  1. Preheat & Prep:

    • Preheat the oven to 400°F (200°C).
    • Line a baking sheet with parchment paper.
  2. Make the Potato Chips:

    • Toss the thinly sliced potatoes with olive oil, salt, and black pepper.
    • Spread them evenly on the baking sheet.
    • Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
  3. Assemble the Nachos:

    • Sprinkle the shredded cheese over the hot chips.
    • Add the chopped corned beef.
    • Return to the oven for 5 minutes, or until the cheese is melted.
  4. Add the Fresh Toppings:

    • Remove from the oven and top with shredded cabbage, green onions, and parsley.
  5. Drizzle with Sauce & Serve:

    • Mix Thousand Island dressing with Dijon mustard and drizzle over the nachos.
