For the Dipping Sauce:
- 1/4 cup mayonnaise
- 1 tbsp horseradish
- 1 tbsp ketchup
- 1/4 tsp Cajun seasoning
For the Fried Pickles:
- Vegetable oil (for frying)
- 1/4 cup all-purpose flour
- 1 tsp Cajun seasoning
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/8 tsp cayenne pepper
- Kosher salt, to taste
- 2 cups dill pickles, drained and sliced
Instructions
- Preheat the oil to 375°F (190°C) in a deep fryer or wide frying pan with about 1 ½ inches of oil.
- Prepare the dipping sauce by mixing mayonnaise, horseradish, ketchup, and Cajun seasoning in a small bowl. Set aside.
- In a medium bowl, whisk together flour, Cajun seasoning, oregano, basil, cayenne pepper, and salt.
- Coat the pickle slices in the flour mixture, shaking off any excess.
- Fry in batches, ensuring the pickles don’t overlap, for 2-3 minutes, or until golden brown.
- Remove with a slotted spoon and drain on a paper towel.
- Serve immediately with the dipping sauce. Enjoy!
