For the Dipping Sauce:
  • 1/4 cup mayonnaise
  • 1 tbsp horseradish
  • 1 tbsp ketchup
  • 1/4 tsp Cajun seasoning
For the Fried Pickles:
  • Vegetable oil (for frying)
  • 1/4 cup all-purpose flour
  • 1 tsp Cajun seasoning
  • 1/4 tsp oregano
  • 1/4 tsp basil
  • 1/8 tsp cayenne pepper
  • Kosher salt, to taste
  • 2 cups dill pickles, drained and sliced

Instructions

  • Preheat the oil to 375°F (190°C) in a deep fryer or wide frying pan with about 1 ½ inches of oil.
  • Prepare the dipping sauce by mixing mayonnaise, horseradish, ketchup, and Cajun seasoning in a small bowl. Set aside.
  • In a medium bowl, whisk together flour, Cajun seasoning, oregano, basil, cayenne pepper, and salt.
  • Coat the pickle slices in the flour mixture, shaking off any excess.
  • Fry in batches, ensuring the pickles don’t overlap, for 2-3 minutes, or until golden brown.
  • Remove with a slotted spoon and drain on a paper towel.
  • Serve immediately with the dipping sauce. Enjoy!
