Description

These Collard Greens with Ham Hocks are a soul food staple—slow-simmered until tender and infused with rich, smoky flavor from savory ham hocks. Perfectly seasoned with garlic, onion, and a touch of vinegar, this Southern classic makes a comforting side for any hearty meal.

Ingredients

Units Scale
  • 2 lbs fresh collard greens, washed and chopped
  • 2 smoked ham hocks
  • 6 cups chicken broth (or water)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon red pepper flakes (optional)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper

  • 1 tablespoon brown sugar (optional)

Instructions

  • In a large pot or Dutch oven, add ham hocks and cover with chicken broth or water. Bring to a boil, then reduce heat and simmer for about 1 hour, until ham hocks are tender.
  • Remove ham hocks and set aside to cool slightly.
  • Stir in diced onion, garlic, red pepper flakes, apple cider vinegar, salt, pepper, and brown sugar (if using).
  • Add chopped collard greens in batches, stirring until wilted.
  • Shred meat from ham hocks, discard bones, and return meat to the pot.
  • Cover and simmer for 45 minutes to 1 hour more, stirring occasionally, until greens are fully tender.

  • Serve hot, ideally with cornbread or alongside your favorite Southern dishes.

Notes

  • Add a splash of hot sauce or more vinegar at the end for an extra punch.
  • Can be made ahead—flavors deepen as it sits.

  • Swap in smoked turkey legs for a lighter version.
