Description

These Colcannon Cheddar Skillet Cakes are golden, crispy, and irresistibly cheesy. Made with leftover colcannon (Irish mashed potatoes with cabbage), sharp cheddar, and green onions, these pan-fried potato cakes are a delicious way to repurpose leftovers or create a comforting side, snack, or breakfast treat.


Ingredients

  • 2 cups mashed potatoes (leftover colcannon works best)
  • 1/2 cup all-purpose flour
  • 1/2 cup sharp cheddar cheese, shredded
  • 1/4 cup green onions, chopped
  • 1 egg, beaten
  • 2 tablespoons butter (for frying)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

 

 


Instructions

  1. In a large bowl, mix mashed potatoes, flour, cheddar cheese, green onions, egg, salt, and black pepper until a dough-like consistency forms.
  2. Heat butter in a large skillet over medium heat.
  3. Scoop about 1/4 cup of the mixture and shape into a patty. Place in the skillet. Repeat with the remaining mixture.
  4. Cook each patty for 3–4 minutes per side, or until golden brown and crispy.
  5. Remove and serve warm with sour cream or an extra pat of butter.

Notes

  • Works great with traditional or flavored mashed potatoes.
  • Add crumbled bacon or herbs for extra flavor.
  • Can be made ahead and reheated in a skillet or oven.
