Units Scale

For the Base:

  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar
  • 5 tablespoons cocoa powder
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 2 cups graham cracker crumbs
  • 1 cup shredded coconut
  • 1/2 cup chopped walnuts (optional)

For the Custard Filling:

  • 1/2 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 2 tablespoons vanilla custard powder
  • 2 tablespoons milk

For the Chocolate Topping:

  • 4 oz semi-sweet chocolate, chopped
  • 2 tablespoons unsalted butter

Instructions

  1. Prepare the Base:

    • In a saucepan over low heat, mix melted butter, sugar, and cocoa powder.
    • Slowly whisk in the beaten egg and stir until thickened.
    • Remove from heat and stir in vanilla, graham cracker crumbs, coconut, and walnuts.
    • Press into a parchment-lined 8×8-inch pan. Refrigerate for 15 minutes.
  2. Make the Custard Layer:

    • Beat softened butter, powdered sugar, custard powder, and milk until smooth.
    • Spread evenly over the chilled base. Refrigerate for 20 minutes.
  3. Prepare the Chocolate Topping:

    • Melt chocolate and butter together over low heat. Let cool slightly.
    • Pour over the custard layer and spread evenly.
  4. Set and Slice:

    • Chill for at least 1 hour before slicing into squares. Enjoy!

Notes

  • For a firmer chocolate topping, let the bars sit at room temperature for a few minutes before slicing.
  • You can substitute vanilla custard powder with vanilla pudding mix, though the flavor may slightly vary.
  • Store in the refrigerator for up to a week or freeze for longer storage.
