Ingredients

Units Scale

For the Meatloaf:

  • 2 lbs ground beef (80/20 for best flavor)
  • 1 cup old-fashioned oats (or breadcrumbs)
  • 1/2 cup diced onion
  • 2 eggs
  • 1/2 cup ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

For the Glaze:

  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce

Instructions

1. Preheat the Oven:

  • Set oven to 375°F (190°C).
  • Grease a loaf pan or line it with parchment paper.

2. Mix the Ingredients:

  • In a large bowl, combine ground beef, oats (or breadcrumbs), diced onion, eggs, ketchup, Worcestershire sauce, salt, black pepper, garlic powder, and onion powder.
  • Mix until just combined—don’t overwork the meat, or it may become tough.

3. Shape the Loaf:

  • Transfer the mixture to the prepared loaf pan and shape it into a loaf.

4. Make the Glaze:

  • In a small bowl, whisk together ketchup, brown sugar, and Worcestershire sauce.
  • Spread half of the glaze over the meatloaf.

5. Bake the Meatloaf:

  • Bake for 45 minutes.
  • Remove from oven, spread the remaining glaze over the top, and bake for another 15 minutes (total bake time: 1 hour).

6. Rest & Serve:

  • Let the meatloaf rest for 10 minutes before slicing.
  • Serve with mashed potatoes and steamed veggies for a classic meal.

Notes

  • For extra moisture, replace oats with panko breadcrumbs or crushed crackers.
  • Want a cheesy twist? Add ½ cup shredded cheddar to the meat mixture.
  • For a spicy kick, mix hot sauce into the glaze.
