Description

These Jordan Pond House Popovers are famous for their airy, golden-brown crust and soft, custardy interior. A signature treat from Jordan Pond House in Acadia National Park, Maine, they are traditionally served warm with butter and strawberry jam.

  • 1 3/4 cups whole milk, warmed

Instructions

  • Preheat Oven: Preheat oven to 450°F (230°C). Grease a popover tin or muffin tin.
  • Mix Wet Ingredients: In a bowl, whisk eggs, then gradually add warmed milk while whisking.
  • Incorporate Dry Ingredients: Slowly mix in flour and salt, stirring until smooth. Avoid overmixing.
  • Add Butter: Stir in melted butter and whisk until fully incorporated.
  • Fill the Tins: Pour batter into the tins, filling each halfway.

 

  • Bake:
    • Bake at 450°F (230°C) for 20 minutes (don’t open the oven!).
    • Reduce heat to 350°F (175°C) and bake for another 15 minutes until puffed and golden.
  • Serve Immediately: Enjoy warm with butter and jam.
