Description

Classic Date Balls are a beloved no-bake dessert made with sweet Medjool dates, crunchy pecans, and crisp rice cereal. Rolled in powdered sugar, they resemble snowy treats with a nostalgic charm. These bite-sized goodies are perfect for gifting, holiday trays, or a wholesome sweet snack.


Ingredients

  • 1 cup chopped Medjool dates (pitted)

  • 1/2 cup chopped pecans or walnuts

  • 1/2 cup crisp rice cereal

  • 1/4 cup unsweetened shredded coconut (optional)

  • 2 tablespoons unsalted butter or coconut oil

  • 1/2 teaspoon vanilla extract

  • Pinch of salt

  • 1/2 cup powdered sugar (for rolling)


Instructions

  1. In a saucepan over medium heat, melt butter and add chopped dates. Stir for 3–5 minutes until soft and paste-like.

  2. Remove from heat and mix in vanilla, salt, and nuts.

  3. Fold in the crisp rice cereal and optional coconut. Stir to combine.

  4. Let mixture cool slightly. Roll into 1-inch balls using clean hands.

  5. Roll each ball in powdered sugar to coat well.

  6. Place on a rack or parchment-lined tray to set.

  7. Store in an airtight container at room temperature or refrigerate for a firmer bite.
