Description

These Cinnamon Sugar French Toast Muffins bring the classic flavors of French toast in a soft, portable muffin form! For the Cinnamon Sugar Coating:
  • 1/3 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 tablespoon unsalted butter (melted, for brushing)

Instructions

1. Prepare the Batter:
  1. Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. In a large mixing bowl, whisk together eggs, milk, vanilla extract, salt, nutmeg, and 2 teaspoons of cinnamon.
  3. Stir in melted butter until fully incorporated.
2. Bake the Muffins:
  1. Evenly divide the batter among the 12 muffin cups.
  2. Bake for 20–25 minutes, or until the tops are set and lightly golden.
3. Coat in Cinnamon Sugar:
  1. In a small bowl, mix ⅓ cup granulated sugar and 1 teaspoon cinnamon.
  2. Brush the warm muffins with melted butter and roll them in the cinnamon sugar mixture until fully coated.
