Instructions
1. Prepare the Batter:
- Preheat the oven to 350°F (175°C) and grease a 12-cup muffin tin.
- In a large mixing bowl, whisk together eggs, milk, vanilla extract, salt, nutmeg, and 2 teaspoons of cinnamon.
- Stir in melted butter until fully incorporated.
2. Bake the Muffins:
- Evenly divide the batter among the 12 muffin cups.
- Bake for 20–25 minutes, or until the tops are set and lightly golden.
3. Coat in Cinnamon Sugar:
- In a small bowl, mix ⅓ cup granulated sugar and 1 teaspoon cinnamon.
- Brush the warm muffins with melted butter and roll them in the cinnamon sugar mixture until fully coated.
