Ingredients

Units Scale
  • 3 cups Rice Krispies cereal
  • 1 cup semisweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • A pinch of salt (optional)
  • Sprinkles or powdered sugar for coating (optional)

Instructions

  1. Prepare the Rice Krispies:
Measure out Rice Krispies cereal into a large mixing bowl and set aside.
  2. Melt Chocolate and Peanut Butter:
Melt chocolate chips, peanut butter, and butter in a microwave-safe bowl or on the stovetop. Microwave in 20-30 second intervals, stirring until smooth, or melt on low heat while stirring constantly.
  3. Add Vanilla and Sugar:
Stir in vanilla extract, powdered sugar, and salt (if using) to the melted mixture until well combined.
  4. Combine with Rice Krispies:
Pour the melted mixture over the Rice Krispies. Gently fold until the cereal is evenly coated.
  5. Form into Balls:
Let the mixture cool slightly, then roll it into small, bite-sized balls. Place the balls on a parchment-lined baking sheet.
  6. Optional Coating:
Roll the balls in sprinkles or powdered sugar for extra flavor and decoration.
  7. Chill and Set:
Refrigerate the balls for about 30 minutes or until firm.
  8. Serve and Enjoy:
Transfer the balls to an airtight container. Keep refrigerated until ready to serve.

Notes

  • For a nut-free version, replace peanut butter with sunflower seed butter.
  • These treats stay fresh for up to a week in the refrigerator.
  • Sprinkle coatings add festive flair for parties and holidays.
