Description
This Protein-Packed Chocolate Mocha Mousse is a creamy, decadent dessert made with silken tofu, rich chocolate, and a hint of coffee. Naturally sweetened with maple syrup, this vegan mousse is perfect for a guilt-free indulgence.

Base:
- 1 block (14 oz) silken tofu (drained)
Flavor Enhancers:
- 1 regular double-shot espresso (or 1/3 cup strong brewed coffee, decaf or regular)
Baking & Spices:
- 4 oz dark chocolate (melted)
- 2–3 tbsp maple syrup (or sweetener of choice, to taste)
- 2 tsp vanilla extract
- 1 small pinch salt
Instructions
- Melt the chocolate:
- In a microwave-safe bowl, melt the dark chocolate in 20-second intervals, stirring between each, until smooth. Let it cool slightly.
- Blend the tofu:
- In a high-powered blender or food processor, add the silken tofu, brewed coffee, melted chocolate, maple syrup, vanilla extract, and a pinch of salt.
- Blend until creamy:
- Blend on high speed until the mixture is smooth and creamy, scraping down the sides as needed. Adjust sweetness by adding more maple syrup if desired.
- Chill the mousse:
- Divide the mousse evenly into serving glasses or bowls. Cover and refrigerate for at least 2 hours to allow the mousse to set.
- Serve:
- Garnish with whipped coconut cream, grated chocolate, or a sprinkle of cocoa powder. Enjoy chilled!
Notes
- For extra protein, use fortified silken tofu or top with chopped nuts.
- Adjust the coffee strength to your preference, or substitute with 1 tsp instant coffee dissolved in hot water.
- This mousse can be stored in the fridge for up to 3 days.
