Ingredients
For the Chocolate Crepes:

For the Whipped Espresso Cream:

For the Caramelized Bananas:

3 ripe bananas, sliced

2 tbsp unsalted butter

1/4 cup brown sugar

1 tbsp rum (optional)

Instructions
Make the Crepes:

In a blender, blend milk, eggs, flour, cocoa powder, sugar, melted butter, and salt until smooth.

Refrigerate the batter for 30 minutes.

Heat a non-stick skillet over medium heat and lightly grease with butter.

Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom. Cook for 1–2 minutes per side.

Stack finished crepes and keep warm or covered.
Make the Whipped Espresso Cream:

Whip heavy cream with powdered sugar, espresso powder, and vanilla until stiff peaks form.

Transfer to a piping bag or bowl and refrigerate until ready to use.
Make the Caramelized Bananas:

Melt butter in a skillet over medium heat, then add brown sugar and stir until bubbly.
