Chocolate Chip Cookie Dough:

  • 1/2 cup Salted Butter
  • 1/4 cup Sugar
  • 1/4 cup Light Brown Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1 1/4 cup Flour
  • 1/2 tsp Baking Soda
  • 1 cup Dark Chocolate Chips

Other:

  • 5 Croissants
  • Sea Salt (optional)

Instructions

  • Make the Brown Butter:
    • Heat butter in a saucepan over low heat. Let it sizzle and bubble until the moisture evaporates.
    • Once the sizzling stops, wait 1-2 minutes until the milk solids turn golden brown. Turn off the heat immediately to prevent burning.
  • Prepare the Cookie Dough:
    • Transfer the brown butter to a heatproof mixing bowl and let it cool slightly.
    • Whisk in sugar and brown sugar until combined.
    • Add the egg and vanilla extract, mixing well.
    • Sift in flour and baking soda, then stir to combine.
    • Fold in ⅓ cup of chocolate chips.
  • Assemble the Crookies:
    • Slice croissants in half.
    • Flatten 2 tbsp of cookie dough and place it inside each croissant. Add a few extra chocolate chips. Close the croissant.
    • Place another 2 tbsp of cookie dough on top of each croissant and press in more chocolate chips for an appealing look.
  • Bake:
    • Preheat oven to 350ºF (175°C).
    • Place assembled crookies on a baking sheet and bake for 12 minutes until golden brown.
  • Serve & Enjoy:
    • Let them cool for 2-5 minutes before transferring to a wire rack.
    • Sprinkle with sea salt for an extra flavor boost. Enjoy warm!

Notes

  • Be careful not to over-brown the butter; it can burn quickly.
  • Dark chocolate chips balance the sweetness, but you can use milk or semi-sweet chocolate if preferred.
