Description

This Chili Lime Chicken is juicy, smoky, and zesty—marinated in a bold blend of spices and fresh lime juice, then baked or grilled to perfection. It’s a flavor-packed, high-protein dish perfect for easy weeknight dinners, summer cookouts, or gluten-free meal prep.


Ingredients

  • 2 lbs chicken drumsticks or thighs (bone-in, skin-on or boneless)

  • 2 tablespoons olive oil

  • Zest and juice of 2 limes

  • 1 tablespoon chili powder

  • 1 teaspoon paprika

  • 1/2 teaspoon cumin

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon cayenne pepper (optional)

  • Salt and pepper, to taste

 

  • Fresh lime wedges, for serving


Instructions

  1. In a large bowl, whisk together olive oil, lime zest, lime juice, chili powder, paprika, cumin, garlic powder, onion powder, cayenne (if using), salt, and pepper.

  2. Add the chicken and toss to coat thoroughly. Cover and marinate for at least 30 minutes or up to overnight in the refrigerator.

  3. Preheat oven to 400°F (200°C) or grill to medium-high heat.

  4. For oven: Arrange chicken on a foil-lined baking sheet. Bake for 35–40 minutes, flipping halfway through, until golden and internal temperature reaches 165°F (75°C).

  5. For grill: Grill chicken for 6–7 minutes per side until charred and cooked through.

  6. Squeeze fresh lime juice over the chicken before serving. Garnish with extra lime wedges.

Notes

  • Works great with boneless chicken breasts or tenders—adjust cooking time accordingly.

  • Add extra cayenne for more heat, or reduce for a milder version.

  • Serve with rice, grilled veggies, or salad for a complete meal.
