  • 1 cup cooked chicken (shredded or diced)

Condiments:

  • 1/4 cup marinara sauce

Baking & Spices:

  • 1 tsp Italian seasoning

Bread & Baked Goods:

  • 4 slices bread (Italian, sourdough, or your choice)

Dairy:

  • 2 tbsp unsalted butter (softened)
  • 4 slices mozzarella cheese
  • 2 tbsp grated Parmesan cheese

Instructions

  1. Prepare the Chicken Mixture:
    • In a small bowl, mix the cooked chicken with marinara sauce and Italian seasoning. Set aside.
  2. Assemble the Sandwiches:
    • Spread softened butter on one side of each bread slice.
    • Place a slice of bread butter-side down on a flat surface. Layer 1 slice of mozzarella, half of the chicken mixture, 1 tbsp of grated Parmesan, and another slice of mozzarella.
    • Top with another slice of bread, butter-side up. Repeat for the second sandwich.
  3. Cook the Sandwiches:
    • Heat a large skillet or griddle over medium heat.
    • Place the sandwiches in the skillet and cook for 3–4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted.
  4. Serve:
    • Remove from the skillet, slice in half, and serve warm. Pair with extra marinara sauce for dipping if desired.

  • Use rotisserie chicken for convenience or leftover grilled chicken for extra flavor.
  • Substitute mozzarella with provolone or fontina for a different cheese profile.
