Produce:

  • 3 cloves garlic, minced
  • 6 cups fresh spinach

Canned Goods:

  • 1 cup chicken broth

Baking & Spices:

  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste

Oils & Vinegars:

  • 2 tablespoons olive oil

Dairy:

  • 2 tablespoons butter
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Prepare the Chicken:
    • Season chicken breasts with salt, pepper, and Italian seasoning.
    • Heat olive oil in a large skillet over medium-high heat.
    • Sear chicken for 4–5 minutes per side until golden brown and fully cooked. Remove from skillet and set aside.
  2. Make the Sauce:
    • Lower the heat to medium, then melt butter in the same skillet.
    • Add minced garlic and sauté for 1 minute until fragrant.
    • Stir in chicken broth and heavy cream, scraping up any browned bits from the pan.
    • Simmer the sauce for 3–4 minutes to thicken slightly.
  3. Add Spinach and Parmesan:
    • Add spinach to the skillet, stirring until wilted.
    • Stir in grated Parmesan cheese until melted and incorporated into the sauce.
  4. Combine:
    • Return the cooked chicken breasts to the skillet, spooning sauce over them.
    • Simmer for 2–3 minutes to heat through.
  5. Serve:
    • Serve warm with pasta, rice, or crusty bread for dipping.

Notes

  • Substitute half-and-half for heavy cream for a lighter option.
  • Add mushrooms or sun-dried tomatoes for extra flavor and texture.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
